Aprovechamiento de recursos pesqueros infrautilizados para la obtención de alimentos mejorados de peces de acuicultura
Resumen
Se caracterizaron varios recursos pesqueros infrautilizados (especies de bajo interés, residuos de la industria transformadora, etc.) seleccionando uno de ellos en base a su composición, volumen y disponibilidad para la obtención de proteína de alta calidad apta para dietas de alevines de dorada o rodaballo. De las tecnologías de extracción existentes, se optó por la hidrólisis enzimática ya que las condiciones de reacción aplicadas permiten obtener un producto final de alto valor nutritivo. Se ensayaron cuatro enzimas comerciales mediante la determinación de su actividad se seleccionó aquella de mayor relación actividad/coste. Finalmente, se optimizaron las condiciones de obtención del hidrolizado y se comparó la digestibilidad in vitro de la proteína obtenida con la de un producto no tratado. Estos resultados obtenidos en laboratorio se confirmarán posteriormente mediante la realización de un ensayo in vivo.
Several underutilized fisheries resources were analyzed (low market value species, fish processing by-products,…) and one of them was selected according to their composition, amount and availability for high quality protein production for juvenile gilthead sea bream and turbot diets. Enzymatic hydrolysis was selected of the extraction technologies since the applied hydrolysis conditions allow to obtain a high nutritional value product. Four commercial enzymes were tested for their activity being selected that with the most activity/cost relationship. Finally, the conditions for hydrolysate production were optimised and in vitro digestibility was compared for the obtained protein and without treatment product. The results obtained in laboratory will be later confirmed by an in vivo assay.
